Burning Meat: Smitty's Barbeque, Lockhart, Texas
The Story Behind the Photo:
My photo buddies and I were in the middle of a day's journey through bluebonnet country photographing the Texas springtime when we decided to have lunch at Smitty's. It's hard to describe this but to get some barbecue you walk up to the butchers and tell them what kind of meat(s) you want; brisket, sausage, chicken, and how much.They cut it off a larger piece and hand it to you on a paper plate. If you want side dishes you get those in the dining room. I happened to have my camera with me and asked if I could take some photos. They never object! I clicked off about 10-12 photos inside Smitty's and this was one of them. I later processed it and up loaded it to Smugmug.
Two years ago I was contacted by a Dutch publisher doing a book on European smoked meats and they wanted to purchased this photo. We agreed on a price and they paid for it and I emailed it to them. The photo paid for lunch, our gas and a stop at Blue Bell ice cream shop.
After the book was published they sent me a copy. I can't read it but my photo is on page 19. It is published under the name, HETE ROOK. My translation is "hot smoke".
